Colby Wines was the brainchild of Darren Colby and his close friends. Born out of necessity and an unyielding passion for exceptional wine and exquisite food - they wanted to break away from the dry, lecture-style, boring tastings that dominate the industry and give people what they want.
Darren started young, spending time at the family’s fine dining, Cheshire restaurant; known for its industry setting standards. Immersed in that world he developed a natural fascination with flavout, texture and the genuine art of hosting people.
At Colby Wines, we champion a completely “anti-textbook” approach to the wine experience. We have deliberately left the dry, parrot-fashion style lectures behind in favour of lively storytelling, hands-on discovery, and shared enjoyment. Wehether you are a seasoned collector or a group of friends who simply love a brilliant glass, our goal is to break the ice and ensure every individual feels entirely included.
Complemented by an international background, his passion took him across the globe - including the privilege of hosting champagne tastings in the first-class cabin of Delta Air Lines.
Crucially, we believe that the food is equally as important as the wine itself. That’s why every experience is paired with the finest quality food; meticulously selected to complement your tasting journey.
We are dedicated to bringing world-class hosting to tables across Liverpool, Merseyside and the entire North West. For us, premium quality is non-negotiable, and every element of our service reflects a profound appreciation for wine and its ultimate counterpart - food.
